Super simple & easy beet hummus for the perfect snack


Beet Hummus

The new avocado toast

Recipe:


2 medium beetroots

1 can chickpeas rinsed & drained

1 tablespoon of lemon

1 teaspoon of salt

2 tablespoons of tahini

80 ml of olive oil

1 teaspoon of cumin

3 cloves of garlic


Directions:


Preheat oven to 375 f


Wash beetroot & wrap in foil


Bake for 50-60 min (longer if bigger beets)


Remove from oven and let cool


Peel the skin off the beetroot


Blend beetroot & all ingredients until you get a creamy consistency (add oil as needed to help blend)




How I prepared it with a meal:


I toasted a slice of 12 grain bread

Once toasted I used a knife to cover the toast with the hummus

Topped with pine nuts & dried cranberries

I also added a little honey for sweetness
